I always found this so interesting because for most it seems the path to enlightenment seems to be in realizing that we are not our thoughts... that thoughts are just thoughts.

Yeah that's an interesting point Bryan! Thought are just thoughts until we buy into them....and for the most part we buy into them. Whilst not buying into ones thoughts is the path to take we also need to take responsibility for our conscious thoughts.....these are the ones that are important

Here's how I see it....there are voluntary and involuntary thoughts. The latter are the ones we can ignore and not buy into....these are usually crap, negative rubbish from the past or whatever. BUT the voluntary ones are the thoughts we must be very aware to make sure they are positive and serve us....these are the ones that "make us"

If you consciously think in a negative fashion then you can expect negativity in your life.......

Put another way....whether you believe you can or you can't, you're usually right!

Thoughts don't just exist in some imaginary ether.

They physically exist in the form of physical chemicals and electrical charges. And they are recorded and can be recalled. So yes, we are partially our thoughts.

But other than academic interest, I'm not sure how relevant that is.
